FRITTERS, CROQUETTES, DUMPLINGS AND CRULLERS When cooking any article to be immersed in fat use about this proportion: 2 pounds of sweet lard to 1 of suet, which had been previously tried out. It is cheaper, also more wholesome, to use part suet than to use all lard. Save all pieces of left-over fat, either raw or cooked, from steaks, roasts, bacon or ham. Cut all up into small pieces and place in a pan in the oven until tried out, or put in a double boiler and stand over boiling water until fat is tried out. Strain and stand aside to be used as drippings. To clarify this fat, pour boiling water over, let cook a short time, strain and stand away in a cool place, when a cake of solid fat will form on top, which may be readily removed and used as drippings, or it may be added to the kettle of fat used for deep frying. Always strain fat carefully after frying croquettes, fritters, etc. Should the frying fat become dark add to the can of soap fat the economical housewife is saving. Return

PENNSYLVANIA DUTCH Desserts STEAMED FRUIT PUDDING 1 cup raisins 1 cup chopped suet 1 cup molasses 1 cup milk 1 tsp. salt 1 tsp. soda ¼ cup boiling water ½ tsp. cinnamon ½ tsp. nutmeg ½ tsp. allspice ½ tsp. cloves flour Combine and mix all the ingredients with flour enough to make a stiff batter; then add the soda dissolved in boiling water. Put into a well greased mould, cover tightly and steam for 3 hours. Serve with a sauce made from: 1 cup brown sugar 1 tsp. vanilla 1 egg, beaten Beat all together until creamy and pour over the pudding when serving. From the “e-Cookbook” 65 Amish Recipes 2/3 c. sugar 2/3 c. milk 2/3 c. flour 2/3 c. oil 3 eggs 1/2 tsp. salt 1/2 tsp. vanilla 1 to 1 1/2 tsp. cinnamon 1 c. sugar 2 c. flour 1 1/4 tsp. baking powder 1 tsp. baking soda Combine ingredients in large airtight container with lid. Store at room temperature, do not refrigerate. Stir every day for 17 days. The recipe makes more than the 1 cup needed. But allows for evaporation. Fastnacht Day Doughnuts POTATO DOUGHNUTS ¾ cup sugar 2 eggs 1 cup mashed potatoes ½ cup sweet milk 2½ cups flour 1½ tblsp. shortening ½ tsp. salt ⅛ tsp. nutmeg 1 tblsp. baking powder Beat mashed potatoes, add melted shortening, beaten eggs and milk. Sift dry ingredients together and add to the liquid. Dough should be soft yet firm enough to roll. Separate dough into 2 parts and roll each out to thickness of ¾ inch. Cut with doughnut cutter and cook in deep fat (365-f) fry to golden brown. Drain on absorbent paper. Dust with powdered sugar or sugar and cinnamon mixture. BLUEBERRY MUFFINS ⅓ cup butter ¾ cup sugar 1 egg beaten lightly 1 cup milk 2 level cups flour 4 level teaspoons baking powder ½ teaspoon salt 1 cup blueberries Cream butter and sugar.
